200 g of prima donna
fino Demerara organic sugar (rough brown sugar)
Cut the prima donna wedge into small cubes. Using a cooking torch , give the cubes some heat for about 15 seconds (do not melt them ).
Spread demerara sugar on top of it as you wish but usually one spoon of it (soup size) will do the job.
Now using the culinary torch again , you caramelize it until the sugar gets brown and the prima donna cubes are slightly melt.
Finish spreading as much pepper jelly as you like on top of it all and enjoy it.
Notes : do not use refined white sugar as an alternative.
