Ingredients part 1
1 cup of chickpeas (pre hydrated for at least 8 hours
½ onion
1 garlic
fine herbs
¼ cup extra virgin olive oil
1 tablespoon of chia (the chia must be hydrated in ¼ cup of warm water)
2 tablespoons of flour (bread flour preferred)

Prima Donna maturo cheese
apricot jelly (optional)

Preparation method:

Part 1
Remove all the water from the chickpeas that were soaking and put in the pressure cooker for about 20-25 minutes. Then place in the blender (or processor) and add all the ingredients except the bread flour until the dough forms. Put the dough into a bowl and add the bread flour. Let the dough rest for a few minutes in the refrigerator to make it easier to make the hamburger patties

Part 2

In the meantime, let's prepare Prima Donna's cheese crusts. For this recipe we used about 250g of Prima Donna Maturo cheese. Grate the Prima Donna maturo cheese and put about 3 tablespoons of it in a preheated frying pan and set it to low heat. Make as many crusts as you want. In this recipe we used one per hamburger. Let the crusts rest.

Time to fry the hamburgers. Mold the hamburgers from the mass that was resting, making balls and then flattening them. Tighten the edges to make them look even. Place the hamburgers in a preheated frying pan and with a little extra virgin olive oil, frying well on both sides.
Now just assemble the hamburger with bread, lettuce, tomato onion, vegetable mayonnaise to taste, fine herbs, apricot jam (optional) and the delicious final touch of a Prima Donna cheese crust.
