5.3 oz. (150 g) Prima Donna maturo, grated
1 whole-wheat baguette
0.5 oz. (15 g) fresh coriander
1 clove of garlic
2.6 oz. (75 g) salted cashew nuts
50 ml olive oil
2 tbsp. lemon juice
Also needed: grill pan, food processor
Cut the zucchini in thin slices (about 3 mm), sprinkle salt on both sides and leave it for 30 minutes. Then wash the salt off and pat the slices dry. Heat the grill pan and grill the zucchini slices on both sides. Peal the garlic and grind the cashews with the olive oil, garlic, coriander and lemon juice in the food processor. Mix the cheese through, but keep some as garnish.
Slice the bread and smear the cashew paste on. Put a slice of grilled zucchini on every piece of bread and garnish it with some graded Prima Donna maturo.
