A cheese lover from Holland during his quest to find the best cheeses in Italy discovered the beautiful, local cheese specialties. Back in the Netherlands he created a Dutch cheese with an Italian character. Inspired by the hard Parmesan and the soft, sweet Gruyere cheese the Dutch cheese masters created Prima Donna; a softer structure than Parmesan cheese and harder than Gruyere with a specifically soft, nutty taste. Prima Donna maturo goes more in the direction of Parmesan, while Prima Donna fino goes more in the direction of Gruyere. Prima Donna has perfect melting characteristics, making it a star in the hot and cold kitchen.
Not only the unique recipe and specific flavor defines Prima Donna, but also the specific ripening makes Prima Donna unique in its kind. Just like the best of wines, Prima Donna reaches its pinnacle of flavor by spending the right time in the cheese masters warehouse with a specific humidity and temperature.
On wooden boards Prima Donna receives all time to ripen until the desired unique flavor has been reached. The cheese master inspects Prima Donna regularly to decide whether it may leave the warehouse as fino, maturo, forte or leggero. The unique and constant flavor of Prima Donna is paramount for the cheese master when deciding if the cheese is ready to leave the warehouse.
The success of Prima Donna was recognized early beyond the borders of Holland and started to enjoy a growing global demand.
